HOW TO COOK OKRA SALAD
Ingredients To Cook Okra Salad
1 medium onion diced small
1 medium tomato diced small
white vinegar
1 – 1 1/2 pounds fresh okra
(may use frozen okra, thawed)
corn meal
Step 1 To Cook Okra Salad
Dice onion and tomato and place together in small mixing bowel, cover with vinegar and set aside.
Step 2 To Cook Okra Salad
Roll cut okra in corn meal and fry in hot vegetable oil until golden brown.
Step 3 To Cook Okra Salad
Drain okra on paper towel.
Step 4 To Cook Okra Salad
Pour off the vinegar from the tomatoes and onions then combine with the okra in a serving bowl.
Step 5 To Cook Okra Salad
Serve warm.
HOW TO COOK LEEKS
Ingredients To Cook Leeks
3 quarts oil (peanut, vegetable, or canola)
12 ounces leeks, cleaned and trimmed of dark green parts
1 1/2 cups milk
1 large egg
2 cups all-purpose flour
2 teaspoons kosher salt, plus additional for seasoning
Step 1 To Cook Leeks
Preheat the oil in a heavy 5-quart pot over medium-high heat to 375 degrees F.
Step 2 To Cook Leeks
Slice the leeks into 1/2-inch wide rings, separating them 2 layers at a time.
Step 3 To Cook Leeks
In a medium mixing bowl, whisk together the milk and the egg.
Step 4 To Cook Leeks
In another medium mixing bowl, combine the flour and salt.
Step 5 To Cook Leeks
Divide the flour into 2 separate, shallow dishes and place the milk and egg mixture in a third.
Step 6 To Cook Leeks
Going 1 small handful at a time, dip the rings first into the first flour mixture, then into the milk and egg, and then into the second flour mixture.
Step 7 To Cook Leeks
Working in batches, fry the rings for 1 to 1 1/2 minutes, or until golden brown.
Step 8 To Cook Leeks
Remove the rings to a cooling rack set inside a half sheet pan and allow to drain for 2 to 3 minutes before serving.
Step 9 To Cook Leeks
Season with additional salt, if desired.
HOW TO COOK BRUSSELS SPROUTS
Ingredients to Cook Brussels Sprouts
1 pound Brussels sprouts, rinsed
1/2 cup water
1/4 teaspoon kosher salt
Steps
Step 1 to Cook Brussels Sprouts
Cut off the stem end of the Brussels sprouts and remove any yellowing outer leaves.
Step 2 to Cook Brussels Sprouts
Cut each Brussels sprout in half from top to bottom.
Step 3 to Cook Brussels Sprouts
Place the Brussels sprouts, water and salt into a 3 to 4-quart saucier and cover.
Step 4 to Cook Brussels Sprouts
Place over high heat and cook for 5 minutes or until tender.
Step 5 to Cook Brussels Sprouts
Remove and serve immediately.
HOW TO COOK CORN AND SQUASH
Ingredients to Cook Corn and Squash
1/2 c. butter
1 sm. onion, chopped
1/2 c. celery, chopped
1/4 c. bell pepper, chopped
1/2 tsp. salt
1 tsp. sugar
1/4 tsp. pepper
2 lbs. yellow squash, diced
1 can (12 oz.) whole kernel corn, drained
1/2 c. bread crumbs
1/2 c. sour cream
2 tbsp. finely chopped onions
Steps
Step 1 to Cook Corn and Squash
Melt butter in large skillet.
Step 2 to Cook Corn and Squash
Combine chopped onion, celery and bell pepper and saute lightly in a large skillet and add seasonings then stir.
Step 3 to Cook Corn and Squash
Add diced squash and saute 15 minutes. Stir in corn and bread crumbs.
Step 1 to Cook Corn and Squash
Bake 30 minutes at 325 degrees in a large greased casserole dish.

Combine cheddar cheese, sour cream and 2 finely chopped onion.
Step 4 to Cook Corn and Squash
Spread over baked casserole and bake at 350 degrees for 5 minutes longer.
Step 5 to Cook Corn and Squash
Use fresh vegetables when in season.
