How to Cook Mussels With White Wine

 

 Mussels With White Wine



Ingredients to Cook Mussels With White Wine

     3 pounds cultivated mussels
     1/3 cup all-purpose flour
     2 tablespoons unsalted butter
     2 tablespoons good olive oil
     1 cup chopped shallots (5 to 7 shallots)
     1 1/2 tablespoons minced garlic (5 to 6 cloves)
     1/2 cup chopped canned plum tomatoes, drained (4 ounces)
     1/2 teaspoon good saffron threads
     1/3 cup chopped flat-leaf parsley
     1 tablespoon fresh thyme leaves
     1 cup good white wine
     2 teaspoons kosher salt
     1 teaspoon freshly ground black pepper

Instructions

Step 1 to Cook Mussels With White

To cleanse the mussels, put them in a large bowl with two quarts of H2O and the flour & soak for 30 minutes, or until the mussels removed any sand.

Step 2 to Cook Mussels With White

Pat dry the mussels, then remove the "beard" from every w/ your thumbs.

Step 3 to Cook Mussels With White

 If they're unclean, scrub the mussels w/ a brush under running water. Discard some mussels whose shells are not tightly close.

Step 4 to Cook Mussels With White

Into  a huge non-aluminum stockpot, melt the butter & olive oil on medium warmth.

Step 5 to Cook Mussels With White

Add the shallots & prepare for five mins.; and add the garlic & prepare for 3 additional minutes, or 'til the shallots are semitransparent. Add the saffron, parsley, thyme, salt, tomatoes, wine,  & pepper.

Step 6 to Cook Mussels With White

Work to a boil.

Step 7 to Cook Mussels With White

Sum Up the mussels, stir well, then cover the pot, & cook over limited heat for 8 to 10 minutes, 'til entire mussels are opened (put away any that don't open).

Step 8 to Cook Mussels With White Wine

W/ the lid on, stir the pot once or double to be sure the mussels don't burn on the bottom. Pour Out the mussels & the sauce in a huge bowl & serve hot.
