HOW TO COOK FILET MIGNON

FILET MIGNON
Ingredients To Cook Filet Mignon
3 c. dry red wine
3 tbsp. cognac
3 shallots, chopped
1 tsp. thyme
6 filet mignon steaks
4 c. beef stock
Step 1 To Cook Filet Mignon
Whisk first 4 ingredients in large bowl.
Step 2 To Cook Filet Mignon
Marinate steaks overnight in glass pans.
Step 3 To Cook Filet Mignon
Remove steaks from marinade and pat dry.
Step 4 To Cook Filet Mignon
Cook steaks in oven, pan or barbeque.
Step 5 To Cook Filet Mignon
Transfer marinade to saucepan. Boil about 20 minutes to reduce to 1 cup.
Step 6 To Cook Filet Mignon
Add stock and boil about 20 more minutes to reduce to 1 1/4 cups.
Step 7 To Cook Filet Mignon
Add 5 tablespoons of chilled butter to sauce and spoon over steaks. Serves 6.
