HOW TO COOK BACON IN THE OVEN
Ingredients to Cook Bacon in the Oven
1 pound thinly sliced bacon
1 box Stove Top stuffing (any kind, or homemade)
your preferred dip

Steps 1 to Cook Bacon in the Oven
Preheat oven to 350°F.
Steps 2 to Cook Bacon in the Oven
This is so easy the kids love to help.

Prepare stuffing according to directions.

Line a cookie sheet with foil.

Divide the package of bacon in half.

Start with half the package and put a little bit of the stuffing in a ball and wrap the stuffing in a piece of bacon.

Roll it from one end to the other and place on the cookie sheet, with the end piece facing down so as it won’t unroll when it is cooking.

HOW TO COOK OKRA SALAD
Ingredients To Cook Okra Salad
1 medium onion diced small
1 medium tomato diced small
white vinegar
1 – 1 1/2 pounds fresh okra
(may use frozen okra, thawed)
corn meal
Step 1 To Cook Okra Salad
Dice onion and tomato and place together in small mixing bowel, cover with vinegar and set aside.
Step 2 To Cook Okra Salad
Roll cut okra in corn meal and fry in hot vegetable oil until golden brown.
Step 3 To Cook Okra Salad
Drain okra on paper towel.
Step 4 To Cook Okra Salad
Pour off the vinegar from the tomatoes and onions then combine with the okra in a serving bowl.
Step 5 To Cook Okra Salad
Serve warm.
HOW TO COOK LEEKS
Ingredients To Cook Leeks
3 quarts oil (peanut, vegetable, or canola)
12 ounces leeks, cleaned and trimmed of dark green parts
1 1/2 cups milk
1 large egg
2 cups all-purpose flour
2 teaspoons kosher salt, plus additional for seasoning
Step 1 To Cook Leeks
Preheat the oil in a heavy 5-quart pot over medium-high heat to 375 degrees F.
Step 2 To Cook Leeks
Slice the leeks into 1/2-inch wide rings, separating them 2 layers at a time.
Step 3 To Cook Leeks
In a medium mixing bowl, whisk together the milk and the egg.
Step 4 To Cook Leeks
In another medium mixing bowl, combine the flour and salt.

Divide the flour into 2 separate, shallow dishes and place the milk and egg mixture in a third.

Going 1 small handful at a time, dip the rings first into the first flour mixture, then into the milk and egg, and then into the second flour mixture.

Working in batches, fry the rings for 1 to 1 1/2 minutes, or until golden brown.

1 pound Brussels sprouts, rinsed
1/2 cup water
1/4 teaspoon kosher salt

HOW TO COOK BEEF BRISKET

Ingredients TO COOK POTATO:
4 huge baking potatoes, such as russets
1 box (3oz) cream cheese, softened
1 teaspoon chopped clean or frozen chives
3 tablespoons butter
1/2 cup grated Parmesan cheese
2 tablespoons sour cream
1 egg
1/2 teaspoon salt
dash pepper
paprika, optional
additional grated Parmesan cheese, for garnish
Steps 1 TO COOK POTATO:
Scrub potatoes well; grease softly w/ shortening and pierce with a fork 2 or 3 times.
Steps 2 TO COOK POTATO
Bake in 400° oven for one hour or until fork tender.

When cool enough to handle, cut potatoes lengthwise & scoop out potato in electric mixer bowl.

Sum Up remaining ingredients, except egg, and mix well. Sum Up egg & beat until smooth.

Fill potato shells; sprinkle with extra cheese and paprika, if desired.

HOW TO COOK BAKED FLOUNDER
1 lg. flounder
1/4 c. cooking oil
1 stick butter, melted
Juice of 1 lemon
1/2 tsp. garlic salt
Parsley
Lemon wedges
Step 1 To Cook Baked Flounder
Preheat oven to 425 degrees.
Step 2 To Cook Baked Flounder
Place flounder on oiled baking sheet.
Step 3 To Cook Baked Flounder
Brush rest of oil on top (black side).
Step 4 To Cook Baked Flounder
Bake 5 to 10 minutes, or until black skin pops and bubbles.
Step 5 To Cook Baked Flounder
Remove from oven. Lower heat to 350 degrees.
Step 6 To Cook Baked Flounder
Carefully remove all black skin and discard. Baste fish with melted butter, lemon and garlic salt mixture.
Step 7 To Cook Baked Flounder
Return to slower oven for 5 to 10 minutes more, basting occasionally.
Step 8 To Cook Baked Flounder
Remove to heated platter.
Step 9 To Cook Baked Flounder
Pour remaining butter over fish. Sprinkle with parsley and decorate with lemon.

2 teaspoons chopped fresh oregano, plus more for garnish

4 6-ounce tilapia fillets
4 tablespoons unsalted butter
1/2 pound thin green beans or haricots verts
1 clove garlic, chopped
1 cup grape or cherry tomatoes, halved
Juice of One lemon
Instructions

Blend the oregano, flour & parsley in a light dish. Flavour w/ salt & pepper.

Ingredients to Cook Couscous
2 tbsp. olive or vegetable oil
2 1/2 to 3 lbs. broiler-fryer chicken, cut up
4 sm. carrots, cut into 2 inch pieces
2 med. onions, sliced
2 med. turnips, cut into fourths
2 cloves garlic, finely chopped
2 tsp. ground coriander
1 1/2 tsp. salt
1 tsp. instant chicken bouillon
1/4 tsp. ground red pepper
1/4 tsp. ground turmeric
1 c. water
3 zucchini, cut into 1/4 inch slices
1 (about 16 oz.) can garbanzo beans, drained (chick peas)
Couscous
Steps
Step 1 to Cook Couscous
Heat oil in Dutch oven until hot.
Step 2 to Cook Couscous
Cook chicken in oil until brown on all sides, about 15 minutes.
Step 3 to Cook Couscous
Drain fat from Dutch oven.
Step 4 to Cook Couscous
Add carrots, onions, turnips, garlic, coriander, salt, bouillon, red pepper and turmeric.
Step 5 to Cook Couscous
Pour water over vegetables.

Heat to boiling; reduce heat.

Cover and simmer 30 minutes the add zucchini to thicken mixture.

Cover and cook until thickest pieces of chicken are done and vegetables are tender, about 10 minutes then add beans; heat 5 minutes.

Prepare Couscous and mound on center of heated platter; arrange chicken and vegetables around Couscous.
HOW TO COOK FILET MIGNON
3 c. dry red wine
3 tbsp. cognac
3 shallots, chopped
1 tsp. thyme
6 filet mignon steaks
4 c. beef stock

Whisk first 4 ingredients in large bowl.
Step 2 To Cook Filet Mignon
Marinate steaks overnight in glass pans.

Remove steaks from marinade and pat dry.

Cook steaks in oven, pan or barbeque.
Step 5 To Cook Filet Mignon
Transfer marinade to saucepan. Boil about 20 minutes to reduce to 1 cup.

Add stock and boil about 20 more minutes to reduce to 1 1/4 cups.
Step 7 To Cook Filet Mignon
Add 5 tablespoons of chilled butter to sauce and spoon over steaks. Serves 6.
HOW TO COOK HOTDOG
Ingredients To Cook Hotdog
1 c. ketchup
1/4 c. vinegar
3 tbsp. Worcestershire sauce
1 tbsp. sugar
Few shakes garlic salt
1/2 c. onion, chopped
1 pkg. hotdogs
Step 1 To Cook Hotdog
Saute onion in butter until soft in small saucepan.
Step 2 To Cook Hotdog
Add all other ingredients (except the hotdogs).
Step 3 To Cook Hotdog
Bring to a boil, and simmer for 10 minutes.
Step 4 To Cook Hotdog
Cut the hotdogs on a diagonal, but not all the way through.
Step 5 To Cook Hotdog
Place hotdogs in a pan and cover with sauce.
Step 6 To Cook Hotdog
Bake until they are cooked through.
This is very easy to make in the microwave.
HOW TO COOK ITALIAN SAUSAGE SOUP
1 lb. ground Italian sausage
2 cloves fresh garlic, minced
3 leaves fresh basil
1 can 15 oz. butter beans
1 can 15 oz. black beans
(beans may be substituted with beans of your choice)
1 can 15 oz. diced tomatoes
2 cups beef broth
grated Romano or Parmesan cheese
Step 1 To Cook Italian Sausage Soup
Cook sausage until brown, add garlic and basil. Sauté 4 minutes.
Step 2 To Cook Italian Sausage Soup
Add remaining ingredients: beans, tomato, broth.
Step 3 To Cook Italian Sausage Soup
Cover and simmer 10-15 minutes, then remove from heat.
Step 4 To Cook Italian Sausage Soup
Serve in soup bowl; sprinkle with cheese and serve with Italian bread, garlic bread or panini bread.
HOW TO COOK BABY BACK RIBS
Ingredients to Cook Baby Back Ribs
2 lbs. baby back ribs
1 med. acorn squash (1 lb.)
2 (18 oz.) jars baked beans
1/4 c. catsup
3 tbsp. maple syrup
2 tbsp. prepared mustard
Step 1 to Cook Baby Back Ribs
Cut racks of ribs into 2 rib portions.
Step 2 to Cook Baby Back Ribs
In large skillet, heat ribs, covered with water, on high heat until boiling. Reduce heat to low and simmer for 40 minutes.
Step 3 to Cook Baby Back Ribs
Meanwhile, cut acorn squash into 3/4″ wedges & Drain ribs.
Step 4 to Cook Baby Back Ribs
Into same skillet, stir in baked beans, catsup, syrup and mustard.
Step 5 to Cook Baby Back Ribs
Add ribs and squash wedges.
Step 6 to Cook Baby Back Ribs
Heat to boiling.

Reduce to low, cover and simmer until ribs and squash are fork tender, about 20 minutes and stir occasionally. Makes 4 servings.

1 whole chicken, about 3 1/2 to 4 pounds, gutted
Kosher salt
1 lemon
4 to 5 thyme sprigs, for stuffing chicken
6 ounces or 3/4 cup pitted, green olives, plus more for stuffing chicken
6 ounces or 3/4 cup pitted black olives, preferably oil-cured, plus more for stuffing chicken
2 tablespoons canola oil
1 shallot, peeled and roughly chopped
1 to 2 teaspoons whiskey (recommended: Jack Daniels)
1/4 cup extra-virgin olive oil, plus 2 tablespoons if needed
2 to 3 tablespoons unsalted butter, softened
salt

HOW TO COOK A PORK ROAST
PORK ROAST
Ingrdients to Cook a Pork Roast
1 (3-5 lb.) pork loin roast
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
2 tbsp. Dijon mustard
1 (11 oz.) can mandarin oranges
1/4 c. light brown sugar
1/4 c. vinegar
1 chicken bouillon cube
1 tbsp. soy sauce
2 tbsp. cornstarch
1/2 c. water
1 med. onion, chopped
1/3 c. green pepper, chopped
Steps
Step 1 to Cook Pork Roast
Wash and pat dry pork roast.
Step 2 to Cook Pork Roast
Sprinkle with salt, pepper and garlic powder.
Step 3 to Cook Pork Roast
Spread Dijon mustard over roast.
Step 4 to Cook Pork Roast
Place in large Dutch oven, cover and bake at 375 degrees (170 degrees on meat thermometer).
Step 5 to Cook Pork Roast
Drain mandarin oranges and reserve liquid & set oranges aside.
Step 6 to Cook Pork Roast
Combine orange liquid, brown sugar, vinegar, chicken bouillon, soy sauce, cornstarch and water.
Step 7 to Cook Pork Roast
Mix and cook until smooth and thickened.
Step 8 to Cook Pork Roast
Remove from heat, stir in onion, oranges and green pepper.
Step 9 to Cook Pork Roast
Spoon sauce over roast and bake at 400 degrees for 30 minutes uncovered.

Slice and serve warm with drippings.
HOW TO COOK A LEG OF LAMB
Ingredients to Cook a Leg of Lamb
1 (7 pound) leg of lamb, fat trimmed to 1/4-inch
12 anchovy fillets, packed in oil
12 cloves garlic, peeled and halved lengthwise
1/4 cup duck fat
3 tablespoons chopped fresh rosemary
1 tablespoon Essence, recipe follows
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 large yellow onion, peeled and quartered
1 large carrot, cut into 2-inch pieces
1 large turnip, trimmed and quartered
2 stalks celery, trimmed and cut into 2-inch pieces
1/2 cup dry red wine
1 cup rich chicken or beef stock
2 tablespoons cold unsalted butter, cut into 4 pieces
Steps
Step 1 to Cook a Leg of Lamb
Preheat the oven to 350 degrees F.
Step 2 to Cook a Leg of Lamb
With a small, sharp knife, make 12 (1 1/2-inch deep) slits about every 2 inches of the lamb.

Wrap the anchovies around the garlic cloves and stuff into the slits.

In a large roasting pan set over 2 burners, heat the duck fat over medium-high heat.

Roast until an instant-read meat thermometer inserted into the thickest part of the leg reads 130 degrees F for medium-rare, about 1 hour and 15 minutes, stirring the vegetables every 30 minutes.

Remove from the oven, transfer to a large platter, and cover loosely to rest for 15 minutes.

Place the pan over 2 burners over medium-high heat.

Add the wine and cook, stirring, to deglaze the pan and reduce by half.

Add the stock and stirring, reduce again by half.

Strain into a small saucepan through a fine mesh strainer, pushing down on the vegetables to extract as much liquid as possible.

Return to medium heat, and stirring constantly, add the butter a piece at a time. Remove from the heat and cover to keep warm.

Carve the lamb, and if desired, serve with the roasted vegetables on the side.
HOW TO COOK BAKED POTATO
Ingredients TO COOK POTATO:
4 huge baking potatoes, such as russets
1 box (3oz) cream cheese, softened
1 teaspoon chopped clean or frozen chives
3 tablespoons butter
1/2 cup grated Parmesan cheese
2 tablespoons sour cream
1 egg
1/2 teaspoon salt
dash pepper
paprika, optional
additional grated Parmesan cheese, for garnish
Steps 1 TO COOK POTATO:
Scrub potatoes well; grease softly w/ shortening and pierce with a fork 2 or 3 times.
Steps 2 TO COOK POTATO
Bake in 400° oven for one hour or until fork tender.
Steps 3 TO COOK POTATO
When cool enough to handle, cut potatoes lengthwise & scoop out potato in electric mixer bowl.
Steps 4 TO COOK POTATO
Sum Up remaining ingredients, except egg, and mix well. Sum Up egg & beat until smooth.
Steps 5 TO COOK POTATO
Fill potato shells; sprinkle with extra cheese and paprika, if desired.
Steps 6 TO COOK POTATO
Bake at 375° until puffed and softly browned.

Mussels With White Wine
Ingredients to Cook Mussels With White Wine
3 pounds cultivated mussels
1/3 cup all-purpose flour
2 tablespoons unsalted butter
2 tablespoons good olive oil
1 cup chopped shallots (5 to 7 shallots)
1 1/2 tablespoons minced garlic (5 to 6 cloves)
1/2 cup chopped canned plum tomatoes, drained (4 ounces)
1/2 teaspoon good saffron threads
1/3 cup chopped flat-leaf parsley
1 tablespoon fresh thyme leaves
1 cup good white wine
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Instructions
Step 1 to Cook Mussels With White
To cleanse the mussels, put them in a large bowl with two quarts of H2O and the flour & soak for 30 minutes, or until the mussels removed any sand.
Step 2 to Cook Mussels With White
Pat dry the mussels, then remove the "beard" from every w/ your thumbs.
Step 3 to Cook Mussels With White
If they're unclean, scrub the mussels w/ a brush under running water. Discard some mussels whose shells are not tightly close.

1/4 cup orange juice
2 teaspoons fresh lemon juice
4 skinless, boneless salmon fillets, 5oz each and 1 1/4'' thick
1 teaspoon brown sugar
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cumin
1/2 teaspoon canola oil
Steps
Step 1 To Cook Oven-Baked Salmon
Combine together orange juice and lemon juice.

Place salmon in a Ziploc bag and pour the juices over the salmon. Reverse salmon to coat well on all sides.

8 eggs

2 teaspoons garlic powder
1 tablespoon hot pepper sauce
1 cup shredded Swiss cheese
6 slices bacon, cooked
2 tablespoons chopped fresh parsley leaves
1 tomato, diced
Instructions:

Drain & pat dry oysters.

2 (8 oz.) pkg. cream cheese
2 tsp. Worcestershire
1/8 tsp. garlic powder
2 cans smoked oysters, drained & finely chopped
1/2 sm. onion, grated
3 tbsp. mayonnaise
1/8 tsp. salt
1/4 c. fresh parsley, chopped
Directions:
Step 1 To Cook Oyster Roll
Merge together cream cheese, Worcestershire, garlic powder, onion, mayonnaise and salt.
Step 2 To Cook Oyster Roll
Spread mixture on waxed paper until it is around 12 x 8 inches and less than 1/2 inch thick.
Step 3 To Cook Oyster Roll
Cool in refrigerator around an hour. Distribute oysters on top of cheese mixture, and roll up into a log.
Step 4 To Cook Oyster Roll
Roll log in shredded parsley & cool refrigerator for twenty-four hours before serving.
Step 5 To Cook Oyster Roll
Serve with crackers. Serves 10-25 depending on what else you serve.

HOW TO MAKE CACCIATORE CHICKEN
Ingredients to make Cacciatore Chicken
4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive vegetable oil
1 large red bell pepper, sliced
1 onion, cut up
3 garlic cloves, finely sliced
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoonfuls drained capers
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely cut up fresh basil leaves
Steps
Step 1 to prepare Cacciatore Chicken
Scatter the chicken pieces with one teaspoon of for each one salt & pepper. Drag the chicken pieces in the flour to coat lightly.
Step 2 to make Cacciatore Chicken
In a big heavy sauteed cooking pan, heat the vegetable oil through a medium-high flame.
Step 3 to make Cacciatore Chicken
Add the chicken parts to the cooking pan and fry just until brown, only about five minutes per side.
Step 4 to make Cacciatore Chicken
If all the chicken does not fit in the cooking cooking pan, saute it in 2 batches. Transfer the chicken to a plate & set aside.

Put the bell pepper, onion & garlic to the same cooking pan & cook over medium heat until the onion is tender, around 5 min.
Step 6 to cook Cacciatore Chicken
Season w/ salt and pepper. Add the wine and simmer until reduced by half, only about 3 minutes.
Step 7 to prepare Cacciatore Chicken
Place the tomatoes w/ their juice, stock, capers and oregano.
Step 8 to make Cacciatore Chicken
Return the chicken parts to the cooking pan and turn them to coat in the sauce. Bring the sauce to a simmer.
Step 9 to make Cacciatore Chicken
Stay simmering over medium-low heat up until the chicken is good cooked through, about 30 min for the breast parts, & 20 min for the thighs.
Step 10 to prepare Cacciatore Chicken
Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slenderly, about 3 min.
Step 11 to cook Cacciatore Chicken
